Ingredients:
- 1 cup lentils
- 1 tbsp olive oil
- ½ small red onion
- 1 carrot chopped
- 1 celery chopped
- 1 garlic clove
- 1 cup
- 2 teaspoon red vine vinegar
- 2 cups chicken broth
- ½ tsp curry
- 1 sprig of parsley chopped
- ½ sweet potato cut into small cubes
Directions
Cook Sweet potato until soft. Set aside. Cook lentils as directed in the package.
In a medium saucepan, heat oil over medium. Sauté onions, carrot, celery, garlic, curry, salt and pepper. Add broth, bring to a boil and add lentils until soup thickens. Ganish with chopped parsley.
