Cauliflower rice with chicken

Arroz de coliflor con pollo

Ingredients:

  • 6 oz chicken breast
  • 1 teaspoon Dijon mustard
  • ¼ cup red onion, sliced
  • 1 teaspoon olive oil
  • 1 cup cauliflower florets
  • Contents of 1 Santo Remedio turmeric capsule
  • Salt and pepper to taste

Directions:

Heat a medium skillet on medium-high. Season the chicken with mustard, salt and pepper. Cook until well done. Add the cauliflower florets to a blender and process until it forms a rice-like texture. Heat the olive oil in a skillet on medium. Once hot, add the cauliflower rice, sprinkled with turmeric, and sauté for one minute. Cover the cauliflower rice and turn it off, letting it steam for an additional 5 minutes. Serve with the chicken once done. Ready for dinner?
