Sweet & sour quinoa salad

Ensalada agridulce de quinoa

Ingredients:

  • 1 teaspoon garlic, chopped
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons red wine vinegar
  • 3 cups kale
  • ½ cup quinoa, cooked
  • ½ cup strawberries, sliced
  • 1 spoon almonds, sliced
  • A pinch of salt and pepper

Directions:

In a medium bowl, mix the garlic and salt before adding the oil, vinegar and pepper. Toss in the kale, quinoa, strawberries and almonds - and lunch is ready to enjoy!
