Sweet & sour quinoa salad
- 1 teaspoon garlic, chopped
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons red wine vinegar
- 3 cups kale
- ½ cup quinoa, cooked
- ½ cup strawberries, sliced
- 1 spoon almonds, sliced
- A pinch of salt and pepper
Directions:In a medium bowl, mix the garlic and salt before adding the oil, vinegar and pepper. Toss in the kale, quinoa, strawberries and almonds - and lunch is ready to enjoy!
