Ingredients:
- 6 oz chicken, in strips
- ¼ cup lime juice
- ¼ cup soy sauce
- 1 tablespoon olive oil
- 1 tablespoon coriander, chopped
- 1 scallion, chopped
- 1 tablespoon toasted sesame seeds
- 2 cups spinach leaves
- 2 cloves of garlic
- Salt and pepper to taste
Directions:
In a large bowl, combine the lemon juice, soy sauce and oil. Add the chicken and marinate in the fridge for at least 20 minutes. Preheat a pan to medium-high heat. Meanwhile, add the cilantro, scallion, sesame seeds, and the reserve marinade from the chicken to a food processor and blend until creamy. Oil the pan and grill the chicken until well cooked. Serve with sautéed spinach, the sauce and garlic heads. Bon Appetit!
