Avocado and kale salad By Ana Fernandez December 12, 2020 Updated: February 26, 2021 Ingredients: 2 cups kale, chopped 1 avocado, sliced 2 tablespoons lemon juice 1 tomato, sliced 1 medium sized cucumber, sliced 1 radish, sliced 1 tablespoon diced almonds 1 tablespoon extra-virgin olive oil Salt and pepper to taste Directions: Add the kale to a bowl and soften the leaves a little by crumpling with your fingers.
