Avocado and kale salad
Ingredients:
- 2 cups kale, chopped
- 1 avocado, sliced
- 2 tablespoons lemon juice
- 1 tomato, sliced
- 1 medium sized cucumber, sliced
- 1 radish, sliced
- 1 tablespoon diced almonds
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
Directions:
Add the kale to a bowl and soften the leaves a little by crumpling with your fingers. Add the avocado, tomato, radish, cucumber and almonds. Dress everything with lemon, salt, pepper and olive oil.
