Salmon salad with spinach and arugula

Ensalada de salmón, rúcula y espinacas


  • 2 tablespoons red onion, finely chopped 
  • 6 ounces cooked salmon (grilled or canned) 
  • 6 cherry tomatoes 
  • 4 black olives, pitted 
  • 1 cup spinach 
  • 1 cup arugula 
  • ½ cup fresh strawberries, sliced 
  • 2 tablespoon of raw, quick-cooking oats 
  • 2 tablespoon of walnuts 
  • 1 tablespoons olive oil 
  • 1 teaspoon mustard 
  • Salt and pepper to taste 


For the dressing, combine the olive oil and mustard in a small bowl. Cut the cooked salmon into chunks and toss all other ingredients together in a large bowl. Add dressing and mix well. Eat well too!
