Ingredients:
- 6 oz salmon
- 1 cup cooked quinoa
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- 1 tablespoon red bell pepper, chopped
- 1 cup spinach
- ½ cup cherry tomatoes
- Salt and pepper to taste
Directions:
Heat the oil in a frying pan over medium-high. Season the salmon with salt and pepper and cook until soft. Mix the honey, vinegar and red bell pepper in a small bowl. Add to the frying pan and cook with the salmon over low heat for 5 minutes. Serve the quinoa with salmon on top and spinach and tomatoes on the side. Bon Appetit!
