Chicken avocado Mex salad

Ensalada Mexicana de Aguacate y Pollo


  • 1 cooked and chopped chicken breast
  • 1 finely chopped tomato
  • 1 finely chopped onion
  • 2½ teaspoons salt
  • 1 pinch pepper
  • 2 teaspoons lemon juice
  • 2 teaspoons avocado-based mayo
  • 1 teaspoon extra virgin olive oil
  • Spicy sauce to taste
  • 1 freshly chopped lettuce
  • 6 finely sliced avocados
  • 1 Santo Remedio turmeric capsule


Season the chicken breast with salt and pepper and cook in olive oil. Meanwhile, combine the other ingredients (except the lemon juice) in a bowl to make the salad. When cooked, add the chicken breast and lemon juice to the salad. Serve with whole grain crackers. Easy and delicious!
