Sweet & sour poblano pork in plum sauce

Cerdo Poblano Agridulce en Salsa de Ciruela

Ingredients:

  • 4 pork fillets
  • 2 tablespoons peanut oil
  • 1 orange bell pepper, sliced
  • 1 spring onion, chopped
  • 3 cups soybean sprouts  
  • 8 oz mushrooms, sliced
  • Coriander to taste, chopped
  • 6 plums
  • 2 cloves garlic
  • Salt and pepper to taste
  • Pinch of paprika

Preparation:

For the plum sauce, fry the onion and garlic over medium heat for about 1 minute. Add the seedless plums, orange juice, chicken broth and thyme. Cook until boiling. Pour the mixture into a blender and mix into a sauce.
Separately, prepare the pork by cutting the fillets into long, thin slices. Cook them in oil on a frying pan over medium-high heat for about 3 minutes. Add the paprika, mushrooms, chives and soybean sprouts and cook for 2 minutes, mixing well. Add the plum sauce and season with salt and pepper. Served with steamed veggies, just like grandma used to!
