Ingredients:
- 2 chicken or vegan sausages
- ½ chopped red onion
- 1 small green pepper cut into slices
- 1 tablespoon olive oil
- Salt and pepper
- 1 cup wild rice (prepared)
- ½ avocado
Preparation:
Cook sausages as directed on package. In a medium skillet, add the olive oil, onions, and sliced peppers. Season with salt and pepper to taste. Serve over wild rice, accompanied by slices of avocado.
