Seared pork chops Zucchini & Corn on the cob

Cerdo a la plancha con calabacín y maíz

Ingredients:

  • 2 teaspoon olive oil
  • 2 cloves garlic minced
  • 4 (4 ounces) loin pork chops boneless
  • 2 tbsp. of chopped pineapple
  • 2 tablespoons of green olives
  • ½ cup mushrooms
  • 1 cup marinara sauce
  • 2 cups zucchini spiralized into noodles
  • ½ cup mozzarella
  • 1 tablespoon parmesan
  • 1 corn n the cobb
  • Garlic powder
  • Salt & pepper to taste 

Directions:

In a large saucepan on medium heat, cook the garlic in olive oil on low heat for 2 minutes. Add the pork chops until the meat is no longer pink, about 10 minutes. Add marina sauce, pineapples and olives and let simmer for another 6 minutes.   

Preheat oven 425F. Add the zucchini noodles and stir to combine all the ingredients. Transfer to baking dish. Top evenly with mozzarella cheese. Bake for 15 minutes. Sprinkle the parmesan cheese on top.

At the same time in a baking dish roast corn on the cob with 1 tsp olive oil, salt pepper, and garlic powder.
