Ingredients:
- 5 ounces canned tuna in water
- 1 tomato diced
- 2 tbsp red onion diced
- ½ red pepper diced
- 2 tbsp cilantro
- ½ cup plain Greek yogurt or 2 tbsp of avocado mayonnaise
- 2 tablespoons Dijon mustard
- 1 cup raw spinach
- Salt and pepper to taste
- 1 multigrain high fiber toast
Directions:
Add all ingredients to a bowl and combine well.
Serve on top of bed of spinach over a toasted multigrain bread
