Ingredients:
- 2 cups fresh arugula
- 1 tomato, sliced
- 1/2 avocado, pitted and sliced
- 3 slices of fresh mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
Directions:
Assemble the arugula, tomato, avocado slices, and mozzarella in a serving bowl. In a small bowl, whisk the olive oil with the balsamic vinegar, and season with salt and pepper to taste. Pour over the salad. Toss to coat and serve.
