Ingredients:
- 6 oz chicken thighs
- 1 cup zucchini
- 1 cup brown rice
- 3 tbsp olive oil
- 2 tbsp sunflower seeds
- 2 tbsp Brazilian nuts, chopped
- 1 tbsp onion, chopped
- 2 garlic cloves
- 1 tbsp fresh thyme
- 1 tsp oregano
- 1 tsp rosemary
- 1 tbsp orange juice
- 1 tbsp lemon juice
- 2 tbsp cilantro chopped
- Salt and pepper to taste
Directions
In a bowl, add the onion, thyme, oregano, rosemary, orange juice, and lemon, and whisk. Pour mixture into a large plastic bag and add chicken. Marinade for a least 30 minutes. In a medium skillet, add oil and cook chicken over medium heat. Flip chicken every 5 minutes until cooked. Add zucchini. Serve chicken with vegetables and garnish with nuts and cilantro. Cook rice as indicated on the package. Once cooked, add chopped cilantro, mix, and serve with chicken and zucchi
