BBQ Poolside Chicken Tacos

Tacos veraniegos de pollo a la parrilla


  • 6 oz chicken breast grilled (optional), cut into mini cubes
  • ½ cup shredded lettuce
  • ½ Haas avocado, sliced
  • 2 tbsp plain Greek yogurt or sour cream
  • ½ tbsp fresh cilantro, chopped
  • 1 tbsp red onions, chopped
  • 2 tbsp shredded mozzarella cheese
  • 1 tbsp BBQ sauce
  • 2 soft small tortillas


Prepare grill to medium-high heat. Brush chicken with olive oil and season with salt and pepper. Place chicken on the grill for 6 minutes on each side until done. Cut into cubes. Place tortillas on a plate and layer with all ingredients. Top with mozzarella cheese and fold tortillas in half. Enjoy!
