Ingredients:
- 1 teaspoon olive oil
- 1 tablespoon cilantro
- 8 ounces shrimp
- 2 tablespoons feta cheese crumbled
- 1 cup spinach or arugula
- 1 cup quinoa
- ½ tsp coconut extract
- 1 tsp shredded coconut flakes
Dressing:
- 2 tablespoons lime juiced
- 1 tablespoon olive oil
- 2 dashes mustard
- Salt and pepper to taste
Directions:
Cook quinoa as directed in the package. Add coconut extract and coconut flakes, mix well, and set aside.
Season shrimp with salt and pepper. Preheat oil in a skillet over medium-high heat. Add the shrimp to the pan and cook for 2-3 minutes on each side, until the shrimp is pink and cooked through. Set aside and let cool. Layer a bowl with spinach, quinoa, and shrimp. Whisk dressing ingredients together. Serve over quinoa and sprinkle feta cheese and cilantro.
