Ingredients:
- 6 ounces lean ground chicken
- 2 cups red bell pepper sliced
- ½ cup cheddar cheese
- 4 large lettuce leaves
- 1 avocado diced
- ¼ cup sour cream
- 1 tsp cilantro
Pico de Gallo ingredients
- 1 tomato
- ½ medium red onion
- 2 tbsp mango diced
- 2 tbsp cilantro
- 2 tbsp lemon juice
- Salt & pepper to taste
Directions:
Heat skillet over medium heat. Add ground chicken and brown until cooked. Add bell pepper and continue cooking until the beef is cooked through and bell peppers are tender.
Divide chicken mixture among lettuce leaves and top with cheese, avocado, and sour cream and cilantro.
Top with mango Picco de Gallo and enjoy!
