Ingredients:
- 6 oz light tuna in water (1 small can)
- ½ cup cherry tomatoes
- ½ cup arugula
- 1 cup quinoa
- 1 tbsp olive oil
- ½ medium avocado
- 1 tbsp jalapeno pepper
- 1 tbsp green onion
- 1 tbsp lemon juice
- 2 tbsp cilantro, chopped (1 tbsp for garnish)
- 1 tsp ground cumin
- Salt and pepper to taste
Directions:
Cook quinoa as directed in the package. Place arugula in a bowl and add cooked quinoa. In a small bowl, place tuna, jalapeno, green onions, cilantro, lemon juice, salt, pepper, and cumin. Mix well. Place half of the avocado on top of arugula and quinoa. Fill the avocado with the tuna blend. Garnish with cilantro. Enjoy!
