Grape Pecan Chicken

Pollo con quinua y uvas


  • 1 cup quinoa cooked in vegetable broth
  • 1 cup vegetable broth
  • 1 tablespoon olive oil 2 tbsp red onion
  • 2 leeks sliced
  • ½ cup pecan chopped
  • 2 red bell peppers diced
  • 6oz chicken breast
  • 15 seedless grapes sliced in half
  • 1 avocado diced
  • Salt and pepper to taste


In a large skill add 1 teaspoon of olive oil, cook chicken over medium heat, add red bell peppers and stir in oil until tender. Add pecans and grapes. Cook quinoa in vegetable broth. Place chicken and pecans over quinoa.
