Chuletas de cerdo a la naranja con camote


  • 6 oz pork loin chops
  • 1 sweet potato, halved
  • 1 orange, sliced
  • 2 cups spinach  
  • 1 Tbs olive oil
  • A dash of cinnamon
  • Salt and pepper to taste


Preheat oven to 350°F. Sauté pork chops in a skillet over medium high, browning each side about 3-5 minutes. Remove the pork but reserve the juices to cook the orange slices and 1/2 the spinach until tender. Place the pork chops and sweet potato in a baking dish, and top with the citrus spinach. Bake for 30 minutes until pork and potatoes are tender. Steam the remaining spinach and serve. What a delight!
