Lemon Chicken with Asparagus

Pollo al limón con espárragos


  • 6 ounces chicken breast
  • ½ cup brown or wild rice
  • 12 spear asparagus
  • 2 cloves garlic
  • 1 scallion chopped
  • 2 tablespoon olive oil
  • Sal and pepper to taste
  • 1 Lemon slices
  • 1 tablespoon capers 


Prepare grill to medium-high heat. Brush chicken with olive oil season with salt and pepper. Place chicken on grill 6 minutes each side until done.

Cook Brown or wild rice according to package. Toss asparagus with garlic, olive oil, salt and pepper. Broil for 10 minutes until tender.
