Ingredients:
- 6 ounces chopped rotisserie chicken
- ½ tablespoon olive oil
- ½ teaspoon smoked paprika
- 1/8 teaspoon cayenne pepper
- 1 cup broccoli, chopped
- 2 tablespoons golden raisins
- 2 tablespoons pine nuts
- ½ avocado, sliced
- ¼ cup chopped cilantro
- 1 red onion, chopped
- 1 cup quinoa cooked in vegetable broth
- Salt and pepper
Directions:
Heat oil in a skillet over medium heat. Add the chicken, paprika, pepper, raisins, pine nuts, and salt and pepper. Cook for 5 minutes before adding the onion, lemon, cilantro, broccoli, and avocado. Serve with quinoa or salad.
