Pollo y hummus


  • 6 ounces chicken breast
  • ¼ cup hummus
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 tablespoon pine nuts
  • 1 cup broccoli
  • 1 cup red, orange, and green bell peppers
  • Salt and pepper


Preheat oven to 350℉. Season the chicken with salt and pepper and place on a baking sheet. Spread hummus over the chicken and sprinkle with paprika and pine nuts on top. Surround the chicken with the broccoli and peppers. Bake until the chicken is cooked through, about 20 minutes. Increase the oven heat at the end to allow the hummus to dry and brown, about 3 minutes. Serve the roasted chicken with the roasted veggies.
