Caribbean Style Carnitas with Vegetables and Sweet Potato Cream

Carnitas Estilo Caribeño con Verduras y Crema de Boniato


  • 4 oz strip steak or other lean cut of meat
  • 1 sweet potato
  • 1 cup fresh mixed greens or packet of mixed greens
  • ½ cup low-fat milk (or a plant-based substitute like almond or coconut)
  • 1 teaspoon olive oil butter
  • 1 clove garlic
  • Salt and pepper to taste



Cook the meat until browned with salt, pepper and garlic.

Bake the vegetables with a teaspoon of olive oil, salt and pepper to taste.

Peel the sweet potatoes, boil them, and then blend them with milk and butter. Season with salt and pepper. Serve everything together, and enjoy it!
