Ingredients:
- 2 eggs
- 2 slices ham cut into small pieces
- 1 yellow or green pepper cut in half
- 3 tbsp olive oil
- 1 shallot minced
- 1 garlic clove minced
- 2 oz shredded cheddar cheese
- ¼ cup unsweetened almond milk
- 2 tbsp red onions chopped
- Salt and pepper to taste
Directions:
Preheat oven to 400 F. place bell pepper in half. Bake for 3- to 5 minutes. Mix all ingredients together, pour egg mixture into peppers. Bake until eggs are set 30-35 minutes.
