Lazy Summer Chicken with Veggie Puree

Pollo con puré de batata y coliflor


  • 6 oz chicken breast
  • 1 cup cauliflower
  • 1 sweet potato cut into cubes
  • 1 cup mushrooms
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tbsp chopped chives
  • 1 tbsp avocado butter
  • 1 cup of low-fat milk (2%)
  • 1 tbsp onion
  • Salt and black pepper



Bring salted water to a boil. Add cauliflower and sweet potato until softened. In a blender, puree the cauliflower, sweet potato, milk, butter, garlic, salt, and pepper. Separately, heat oil in a pan and fry the onion and mushrooms. Add chicken and cook until it browns. Serve chicken with veggie puree.
